Citroen / Peugeot cooling system question

Hello.We have a 97 Saxo with a tu5 engine [inj'] recently the rad cap lost it's seal and so the water was able to boil away. Replaced cap today and ran it up to temp, parked it in drive and waited for fans. they came on, temp didn't go past halfway, so all good and system is not leaking. MY QUESTION. Why is it that when I turn hard right the temp gauge goes down and turn hard left it goes up, then settles back where it was. is this a blockage or trapped air ,maybe.any ideas.

They are very good for air locks.
Did you open all the bleed screw! Probably one one heater hose, one one thermostat housing and one on top of radiator.

I think air lock too - I will pay someone more confident/ clever than me to bleed it out.

That's ONE ON, but you probably guessed that, its been a long day!
One of the bleed screws may look just like a tyre valve.
