Any modern digital camera, compact, SLR or video will do, but make sure that what you are using it for is 100% legal!Switch off the flash.
Why is this in the motoring section!

Do use the flash if you're not worried about getting caught. Hold the camera above the book as square and as high as possible to minimize perspective distortion, fill the frame with the spread using zoom, use as high a shutter speed as possible. Set the flash to compulsory. If the pages are glossy then watch out for highlights from the flash spoiling the result, alter the angle a little to avoid, if not glossy will not be an issue. Obviously the better the camera the clearer the result will be. It's not a scanner but It is possible to get decent results.

Most modern cameras are fine in natural light. No point whatever in using flash.

If you have plenty of natural light, then just use the camera without flash. Make sure you rest the camera on something or else use a tripod if you have one. If you need to use flash (like in a dark place), move back and zoom in, and switch on macro mode. That reduces the intensity of the flash and prevent washing out of the image.
