In a 12v system what is the blue and what is the brown!

in a 230 volt system blue is neutral and brown is phase/active. Do 12v systems have coded colours!

3 way fridge. I want to put a plug on it but only has a blue and a brown wire and I dont want to blow it up!

Err, a 12v system means you have two choices, either it's positive, or negative, really doesn't take a rocket surgeon to work out which is which, and I'd suggest that brown is most likely the negative.
Now if you are in fact, as I suspect, talking about installing a car stereo, then this is a different question entirely.
Edit: ok you're not talking about stereos.

brown positive blue negative on most things 12v but I have also struck several items prewired with these colours that are the opposite

If it's a 3 way fridge, then I would suggest you have got hold of the mains wires there, blue and brown are standard colours.Don't feed 12v into those!

It has a fixed mains plug already. It has 12v written on the wire.

Then it really could be either direction.
If it were me, I'd probably take it apart to trace the wiring and look for an indication which is which.

Pulled it to bits. Brown is Neg and blue is pos(as I suspected). Thanks to all who helped.
