2002 Tribute P0118 error code

My wife's car has this coming up intermittently. I have checked water etc and all appears to be AOK.

Plugged in my code reader, checked the live data and reset the code. System tells me the code is high water temp.

At start-up the diagnostics was telling me the water temp was 48 deg celc (car not having been run today) going up to 92 deg celc when hot (dashboard gauge was telling me cold then running normally once under way).
At one stage I had turned off the car and restarted it. The reader initially said the engine temp was -40 but quickly reverted to +92.

Are the senders different and is it a faulty sender to the ECU or does it sound more like an ECU fault!
What sender should I be looking at and can I measure it's resistance to see if it's operating correctly!

The engine is the 3L V6 (Ford Durotech!).

I would check the coolant temp. sensor.

I think the engine is fine but probably a faulty sensor.
The reason I think this is because the engine warning light keeps coming on and the P0118 code keeps re-appearing.
The reason I'm asking:
a/ better safe than sorry
b/ want that damned light to go away
