They go up and down several notches to adjust but dont seem to come right off. Have applied quite a bit of pressure upwards with no luck. Dont want to wreck them.

Just pull the seatcover overthe headrest, come off easy enough without removing the headrest.I pretty sure you have to hold a clip out(inside the seat) as you dismantle the seat to remove the headrest.

Slot in cover is not big enough to get over the headrest so they must have been off when the covers were put on.

Looking at the photo, I'dsay they have an internal clip to hold the shafts in. Short of putting your hand up the inside of the seat trim & removing the clip (thats a mission & a motor trimmer job), forget it. Remove them another way like mentioned above

Ive come across this before but trying to remember how it worked, was simple in the end though. Are you sure theres no button or slide knob anywhere. Try pushing it all the way down then pull it up again in one go. Do either of the plastic surrounds twist at all!

Update. None the wiser. Managed to force the cover over the headrest so problem solved. Couldnt find any hidden buttons. Took it to the local Holden dealership. Several helpful guys but none managed to get them off. Thanks for the suggestions.
There is a sliding spring loaded clip on the back of each headrest stem located under the plastic ferrule. It is difficult to find at first but but you will be able to feel it as you move the headrest up and down. There are two different ways in which to remove the headrest:
With a screwdriver With your own hands
