where do people ride these? its 125cc and not WOF'd or registered of course, so obviously can't be ridden on the road, can they legally be ridden at the beach? (sorry if this is the wrong place to ask, i know sfa about them)

On private property or at trail rides or motocross events.
Some beaches are public roads so would need WOF / Reg.
Other beaches are private (mostly west coast), and access is by arrangement with the owner, or during organised events like trail rides.
There are some motorbike parks around that you can pay to ride at if you don't know anyone with suitable private land, such as:

There are a list of paper roads and 4wd tracks around the Waikato where people can ride off road vehicles. One is Thompsons track at Te Aroha.

Strictly speaking - a paper road is in fact a legal road, it just has not been formed. Plenty of examples all over the country. Any enforcement is probably only on an as needed basis, such as a serious crash or death.

I just measured up my granddaughter - darn it! Greater than 50cc.

You ride them anywhere you would ride a "normal" trail bike.
but with lousy suspension, much smaller wheels and not so good ground clearance. Then you PUSH them back to your vehicle after they break down if a product from china.
MUCH better deal would be an older Jap trail bike
