What cut and polish would you recommend

Have an 09 ranger. It's white. Being a ute it's never really had a polish so what would be the best just to get rid of the light Matt look it has?

To be honest your question is like asking what brand/type of beer is best.
So IMO as long as you stick to a brand name cutter you are safe.

Mothers. I used both on my older car and Mothers was better hands down. turtle wax was absolutely crap.

I use 3m cutting compounds in 3 different stages and a good coat of turtle spray wax over the top, Perfect job every time,

normally you would not need to cut paint on a 6 year old vehicle , cutting paint is for 15 to 20 year old damaged paint jobs to try and refurbish them
mguaiars and one other brand ah yea mothers are the 2 top polish brands according to some older threads about this .

with the latest polish esss and one of those buffing machines is it recommended to use a spray bottle water to mist over it

you need three products. meguirs fine cut cleaner, then polish, then carnuba wax. so many people think that a "polish" somehow protects the paint. it dont. only a wax protects the paint. some polishes have wax in them, and some dont. its like painting. you wouldnt paint a top coat (wax) over unprepped timber or just put primer on it (polish) and leave it un topcoated.

I've always used Repo, no idea how it compares to other brands but has always done a good job on my motorbikes.

Farecla is the trade cuttting compound, it goes from coarse to fine then then use a 3M hand glaze to remove any swirl marks left over from the buff.
that's what a professional does. Ever wonder how used cars look like new ones at the car yard?
take it to a paint shop. they will want about $200 to do it.

I use three cloths and do one panel at a time.
One to apply, one to rub off and then a final one to remove any small marks/product remaining.
Don't leave it on too long and always in the shade!
For light scratches, Turtle wax 'swirl and scratch remover' is very effective.

No worries.

I forgot to mention, when washing it with the super-strong soap mixture. Use a good clean wash sponge, and really push hard on the panels, almost like you're polishing it. As in virtually scrub the soap on.
