I have a '97 750 Monster that I am slowly going over.
I have the carbs off and am about to check the float levels. I have seen various specs given for these Mikuni carbs, ranging from 11mm to 14mm or even 15mm.
Where in your opinion is the best source for accurate specs for these?
Would K&N air filters have any bearing on that spec?

No help to you on that 1 sorry , have never had my hands on 1 so would have do research also.
From Haynes Manual:

M750 Main Jet = 132.5
Needle Jet = Y4
Jet Needle = 4th from top
Pilot Jet = 42.5
float height around 13-14mm from bowl gasket
