What are some Christchurch course providers that can get me the full Class 2 licence class quickly (2 days) and for a reasonable cost! (the cheaper the better)

If you want to go a bit south then try Pro-driver Training in Timaru. Maybe cheaper than Christchurch. Very highly recommended
