Could be Accelerator pump cam, discharge Nozzles and make sure when you floor it that fuel comes out of the nozzles straight away.I would also check base and total timing.

is your manifold a single or a dual plane! is your converter stock stall or higher!

put foot down it will hesitate and bog down. If you take off slowly it will drive perfectly akky pump-fer sure fuel is 15 times heavier than air. In taking off fast you require that pump shot of fuel. Taking off slowly is compensating for a maladjusted accellerator foot DOOONNN HARD. pump

Start by looking at the accelerator pumps. They are there to compensate for the sudden increase in air from going WoT.

I chased exactly the same thing for months with no luck, then gave up and took it the garage. He immediately suspected a faulty plug, and changed them. Simple things first !

Funny the carby man told me to change plugs too before I brought it in as it might just be plugs. And then he said he can then tell if its lean or rich. Cheers for the help guys. Will look at adjusting acc pump first
Had a play around with my carby. Followed this video. Have backed acc pump off a few turns. Cant find feeler guage so will find that in daylight. Already stutter is gone when giving a rev while cold. Car starts when cold and idles perfectly without having to feather acc pedal for a minute. Thanks for the advice guys. Seems Secondaries pump has a slight leak So will get it fixed up.

Pump ccs and pump drive cams are ALL changeable she IS a holley-as in a carb you CAN adjust to suit the application.K

Too big a carb can actually make the performance worse.An engine needs to be able to generate enough air speed through the venturi for the fuel to atomise properly.Its all a matter of balancing the carb throat size to the size of the engine to make sure intake air speed is optimised.
As mentioned above though, the Holley is a great carb for being able to adjust it fully.Just a matter of buying the correct jets, pump cam etc and fiddling with the setup.

Yeah will definately get it adjusted again. I think me firing heaps of fuel down it made it idle nicely last night cos this morning cold start is crap again. Will see what it drives like when hot.

cheers for the update/s. Have slightly similar issue myself, and have found lots of info online about how to adjust. Beauty of having umpteen million revheads in the US I guess.
It is a good feeling to sort something yourself, and Holleys are pretty simple once you have the knack.

when i was stepping up my my small block i fitted a single plane manifold. unfortunately the vaccuum signal was too low for the fuel curcuit so it had an inherit dead spot just off idle. no amount of tuning the carb would fix it BUT as soon as i upgraded the stall on the converter it dissappeared as the flare of the converter passed the stumble point. in my case it was a mismatch of parts. since this machine is new to you, it also maybe a mismatch of parts.

I would think you are way over carbed. Use the following link to see the required cfm to suit your motor. http://www.gtsparkplugs.com/CarbCFMCalc.html I started with a 600 on my 308 and it was doing the same thing. Changed to a 475 and made a huge difference. Gets off the mark like a cut cat now. Most of the cfm calculators I used came back with between 470-520 cfm so they seem to be pretty accurate. If I end up keeping it I will probably get rid of the holley and go to a 500cfm edelbrock as it seems to run out of air at around the 5800 rev mark. In general a bigger carb will give better performance in the top end and smaller better down low. Going bigger for the sake of it is only blowing unburnt fuel out the tail pipes. That said seeing as it is a ford you will probably never get it running right :-)
