so, how does one make sure one isn't either buying a stolen car that has been 'changed' or parts that are stolen rather than honest?

Check it's rego number out on carjam is one option, it will at least tell you if it is reported as stolen for free.
Since the public registrations are closed, you must have an invite from a current member to be able to register and post in this thread.
