If you want a top spec motor use a top spec mechanic who knows all the tricks.

It's not hard to re assemble the engine using new parts,you can get a downloadable workshop manual that will tell you everything to do but what is tricky is knowing what is damaged aside from the obvious stuff,you have nothing to lose by tearing it down your self if you keep it organised,take it to a workshop if it looks to be too much to take on

they are easy to work on. get a manual, take your time, and if theres something you arent sure of, a post, with some photos on a bike forum will very quickly see you right along with an explanation.

milky oil does not always mean its blown up, what side is milky, gearbox or engine oil, normally from experience you will find the water pump seals are gone if its on the gearbox side
