From memory behind the spare wheel held into a small bracket with a rubber strap. If its not there check the pockets behind the rear wheel arches inside the boot. The jack handle is usually clipped to the bottom of the spare wheel cover.

Yup under the front passenger seat, only accessible from the back seat.It has a back facing cover on it that has two tabs.Pull together to release the cover and there you have the jack.

it depends which model vitz? 00-05 (old shape) -in boot "behind" the spare wheel;-ie closer to the back bumper or 05 and newer -under LF seat -back edge --plastic cover over it and there it is

They don't need a jack, you should be able to just lift the offending wheel off the ground and get your missus to swap the wheel.
